Cheese Please: Berries + Thyme Jam and Cheese

We’ve JUST launched our first blueberry pre-order of the season, Berries + Thyme, and we are so excited about it! We’re taking the last strawberries of Florida strawberry season, and the first berries of Florida blueberry season and making a sweet, herbal jam you can use on anything….especially cheese.

Ok, now for the cheese! Because Berries + Thyme is a sweet jam with a savory component, truly any cheese pairs deliciously. We chose 3 of our favorite types of cheeses to share with you. Any of these types of cheese paired with nut crackers and our limited batch jam will take your wine night to the next level!

While so many cheeses will be delicious with Berries + Thyme, we fall hard for:

• Triple Cream Cheeses (like a Brie)

• Stilton Cheeses (like a Blue)

• Toscano Cheese (a nice hard cheese, usually a Pecorino. Ours is crusted in herbs!)

If you haven’t pre-ordered your Berries + Thyme, hurry! You only have until next Monday to order, and once it’s out for the public, it won’t be around long! You can pre-order it here.

Cranberry Whiskey, Prosciutto and Brie Grilled Cheese

If your mouth is already watering, it’s totally fine, that’s exactly what happened to us when we thought of this recipe! There’s lots of holiday food recipes with leftovers swirling around, but what about with your left over jam? Maybe you have some Cranberry Whiskey jam left over after Thanksgiving or Christmas?

We’ve got a grilled cheese that will keep you in the holiday spirit! Grab your favorite bread, Cranberry Whiskey jam, brie, and prosciutto and lets get grilling!

Cranberry Whiskey, Prosciutto and Brie Grilled Cheese

Ingredients for 1 sandwich

  • sourdough bread

  • 3 TB Cranberry Whiskey Jam

  • 2 or more slices of brie cheese

  • 3 slices of prosciutto

  • butter or olive oil

  1. Preheat a cast iron skillet on medium.

  2. Butter the outside pieces of sourdough bread.

  3. To build sandwich spread jam on one slice and top with brie and prosciutto. Close sandwich up.

  4. Place bread butter side down onto cast iron skillet and cover. Cover and cook about 5-8 minutes on each side, butter side down, checking often. Remember to re-cover in between checks! That helps the cheese to melt.

  5. Enjoy!

Cranberry Whiskey, Almond + Mint Goat Cheese Balls

You loved our Everything Bagel Goat Cheese Balls, so we just had to give you a holiday version just in time for Thanksgiving! And dare we say we might even like these more?! We mixed goat cheese and our Cranberry Whiskey Jam, rolled them into golfball sized balls and rolled them in almonds, cranberries, and mint. Easy and decadent!

Read below for the full recipe!

Cranberry Whiskey, Almond + Mint Goat Cheese Balls

• Large goat cheese log, softened on counter
Cranberry Whiskey Jam
• Sliced Almonds
• Dried Cranberries
• Fresh mint leaves, diced
• Crackers

1. Allow goat cheese to soften on counter. In a bowl, mix half a jar of Cranberry Whiskey Jam into the goat cheese. Stir until completely mixed.

2. Refrigerate mixture for 15 minutes or until the cheese is firm enough to mold the cheese balls.

3. Roll cheese balls to about 1.5 - 2 inches big. Then roll each ball in the almonds, cranberries, and diced mint. (Pro tip: We did not do this, but realized that it would have been easier to dice up the almonds and cranberries as well, so the toppings would stick better!)

4. Place goat cheese balls on the platter you plan to serve on, and refrigerate until ready to serve! Enjoy!

What are your favorite go-to appetizers? We’d love to hear. And as always, if you've had a chance to use our preserves in a dish or want to share a canning recipe with us use hashtag #theurbancanningco and find us on Instagram @theurbancanningco.

Cheese Please: Brie with Cranberry Whiskey Jam, Pecans, and Bacon

We couldn’t kick off launching Cranberry Whiskey jam without including a recipe involving cheese. For us, Cranberry Whiskey jam fully ushers in the good feelings about the holidays, family, and delicious cozy food. This appetizer or evening nosh with wine is the perfect way to start off your November right this weekend.

We topped a wheel of Brie with jam, fried up some bacon and crumbled it over the top, and added some rosemary and pecans. YUM it was like fall and winter in one bite! Did we mention it’s super easy and fast to make?

As most of you know, Cranberry Whiskey is our beloved holiday jam featuring cranberries, whiskey, and spicy cloves. So that means it has the perfect balance of tart, sweet, and spiced goodness. Cranberry Whiskey jam pairs well basically everything holiday oriented! We’re talking turkey, ham, biscuits, cheese logs, leftover turkey sandwiches, cocktails, and the list goes on! You can still pre-order Cranberry Whiskey jam until Sunday, OR catch us at the Saturday Morning Market and Indie Street Market on Saturday in Saint Pete!

Easy Appetizer: Everything Bagel Goat Cheese Balls

We’re all about EASY appetizers over here, especially since the holidays are quickly approaching! Nothing says appetizer more than cheese and pickles, right?! You know we’re big fans of Everything Bagel seasoning (we shared our own recipe for it here). One thing we haven’t tried it on is cheese. So we whipped up these goat cheese balls rolled in Everything Bagel seasoning. Seriously, whipped them up. It took about 5 minutes.

We think these goat cheese balls pair deliciously with ANY of our pickles. For an appetizer, we would create a simple board with some Habanero Dills, Sriracha Okra, Chili Brussels, and a pile of Ginger Beets. Add your cheese balls, and a variety of crackers, and you’re set. Could it be simpler or tastier?

The best part is, everyone can take their own cheese ball instead of having to dig into one big one. So cute!

Everything Bagel Goat Cheese Balls

We think it’s pretty self explanatory here, but take a large log of goat cheese that is very cold and makes cheese balls about 1 to 1.5 inches big. Pour some Everything Bagel seasoning on a plate and roll each ball so that it is completely coated in seasoning. Refrigerate until ready to serve!

What are your favorite go-to appetizers? We’d love to hear. And as always, if you've had a chance to use our preserves in a dish or want to share a canning recipe with us use hashtag #theurbancanningco and find us on Instagram @theurbancanningco.

Brooklyn South Specialty Cheese + Jam Pairings

This week we visited one of our favorite St. Pete local spots, Brooklyn South. With love all the way from Brooklyn, this little shop is our go-to for sandwiches and specialty cheese and meats on Central.

Meet Matt Bonano, deli owner and local cheesemonger!

We spent some time with Matt this week talking about all things cheese, sandwiches, small business, and community*. By now you all know we love cheese. But we hold a special place in our hearts for specialty cheese. That's right, cheese you won't find at a grocery store. Cheese that has such interesting stories and complex flavors they are perfect matches for our jams. So we picked out four cheeses and one of our jams to match with each type of cheese.

1. Boxcarr Campo + Smoked Tomato Jam

2. Cambozola Black Blue Cheese + Blueberry Lavender Jam

3. Aged Dutch Gouda + Pear Habanero Jam

4. Robiola Bosina + Chai Grape Jam (pictured with Matt above)

Boxcarr Campo + Smoked Tomato Jam

This cheese comes from North Carolina and provides a firm, but creamy texture. It tastes bright with a gentle smoke flavor from the cow milk. The tang and smokiness in our Smoked Tomato jam will pair deliciously with this cheese.

Cambozola Black Blue Cheese + Blueberry Lavender Jam

Making blue cheese in southern Germany creates a surplus of milk. So out of that came Cambozola Black Blue cheese. Using a mix of gorgonzola cultures and camembert this cheese is aged in dark caves making the cheese over time savory, and salty, with a hint of sweetness. We chose our sweet, decadent, and slightly floral Blueberry Lavender jam to pair with this cheese. If there's one thing we love it's a blue with blueberries.

Aged Dutch Gouda + Pear Habanero Jam

This is a special gouda because by the time it gets to Saint Petersburg, it's already 2 years old! It spends a year and a half alone just curing in Holland. What makes it really special is that the cows that produce the milk to make this cheese feed on lush grass grown from blue clay. Blue clay is a very nutrient dense soil because Holland is actually below sea level – so you can imagine how fresh and delicious this cheese is! Don't forget to enjoy the tyrosine crystals that crunch when you bite into them, a flavor punch for sure. The spice and subtle sweetness of our Pear Habanero jam will have all your senses tingling.

Robiola Bosina + Chai Grape Jam

Robiola Bosina is Italy's answer to Brie. While not the same, it has a similar soft and creamy texture. This cheese combines cows and sheeps milk and is aged 30 days to reach its peak flavor. Expect a cheese that's gamey, sweet, milky, soft, and rich. If you're not already drooling over this, be sure to pair it with our Chai Grape, a sweet spiced jam that will have you coming back for more!

Next time you're having a wine and cheese (and jam) night, or looking to wow at your next dinner party/date night, be sure to stop by Brooklyn South. Matt will help you find the perfect cheese for the occasion and you'll leave with some new knowledge.

If you need a restock on your jams, or want to try a new one for cheese pairing, you can find us at most markets around Tampa Bay, online, or at any of our stockists!

*One of the community topics we were talking with Matt about was summer. Summer is a very hard time for all local businesses, especially in St Pete. A friendly reminder to please, please get out and continually support your favorite local companies. We really do depend on EVERY single purchase to get through these hot, inactive summer months.
So much love, Urban Canning

Cheese Pairings: Aged Cheddar + Peach Maple Bourbon

We're big believers in treating yourself all week with little acts of self love. For us today, it's cheese and jam (and a little wine). Wine and cheese nights don't have to be on the weekends, but we like the option to sleep in! This simple moment of bliss takes only about 5 minutes in the kitchen, so grab your partner, your friends, or your fuzzy pal.

Pick up some Kerrygold Aged Cheddar cheese, and pulled your Peach Maple Bourbon jam out of the fridge. Top your favorite crackers with this combo and you're set for an evening of Netflix binging. Don't worry, you'll make a "real" dinner tomorrow!
