Breakfast Board with Berries + Thyme Jam

Are breakfast boards the new charcuterie board?! Our answer is Y-E-S! We’re wishing for the weekend right now so we can throw one of these boards together and eat some breakfast in bed. You may be wondering what to use your new Berries + Thyme with, and breakfast food is one of our favorite ways!

To make a bomb breakfast board you need:

•Something sweet
•Something salty
•Something carby (or a few things let’s be real)
•Something with protein

So you know we’ve got you covered with something sweet, our Berries + Thyme jam! We slather it on yogurt, waffles, croissants, or all bread of any kind really. The thyme adds a hint of earthy, savory flavor that goes well with anything breakfast.

For the salt, we had to have bacon. Because what would a breakfast be without it? And you can tell we like carbs because on our perfect breakfast board there’s at least 2; waffles and croissants!

To add some healthiness and filling protein we added eggs and a bowl of greek yogurt into the mix, as well as some fresh blueberries!

The sky is the limit with these boards! Put your own spin on it by adding some cheese, biscuits, oatmeal and more!

Apple Pie Toast

You know those morning where you want something cozy, comforting, and a little sweet for breakfast? We got you. We know what you’re really wanting is a warm slice of pie, but let’s be honest, we know we can’t eat that most mornings. In comes our Apple Pie Toast, which is dare we say it better than eating actual pie for breakfast?! We toasted some break in the cast iron skillet, smeared some Mascarpone cheese on it, and topped it with our Spiced Apple jam, granola, and an apple slice. A little savory, a little sweet, a lot satisfying.

Now if you don’t know anything about our Spiced Apple jam, it’s basically apple pie in a jar. With a flavor complex similar to apple butter, but all the spices you’d find in an apple pie. Check out what’s in it in our picture below.

Spiced Apple Jam

• Ginger

•Cinnamon

• Nutmeg

• Clove

• Allspice

• Granny Smith Apples (to balance out the sweetness)

Apple Pie Toast

To create 1 piece of toast you'll need:

• 1 slice of multi grain bread
• 1/4 cup of olive oil
• 1 Tb Mascarpone cheese
• 1 Tb Spiced Apple Jam
• 1 Tb granola
• thinly sliced granny smith apples
• cast iron skillet

Instructions:

1. Heat up your cast iron skillet on medium high.
2. Now add 1/4 cup of olive oil to the pan.
3. Fry both sides of the bread slice until toasted and brown. It takes me close to 5 minutes per side. (NOTE: If you are making more than 1 piece of toast you will need to keep adding 1/4 cup of olive oil in the pan before each slice of toast goes in)
4. After the bread is fried smear the Mascarpone cheese all over it.
5. Next top the Mascarpone cheese with the Spiced Apple jam, granola, and apples.
6. Add a dash of cinnamon and enjoy!

Sunny Side Up Pear Habanero Breakfast Tacos

We’re turning up the heat this weekend with spicy Sunny Side Up Pear Habanero Breakfast Tacos! Sweet, spicy, salty, and creamy with egg yolk, you might find yourself eating more than one. We used our Pear Habanero jam as the base of this taco, and layered on chorizo sausage and a perfectly fried egg. Add some avocado or cook up on the hash browns on the side!

Sunny Side Up Pear Habanero Breakfast Tacos

Serves 4

Ingredients:

• Corn tortillas

• 4TB Pear Habanero jam

• 4 eggs

• package of Chorizo sausage

• cracked pepper

Bacon bits (optional)

Instructions:

1. Warm up your jam and glaze on the tortillas.

2. Slice and fry up your chorizo and place on tortillas.

3. Then fry your eggs sunny side up, and top off your breakfast taco.

4. Sprinkle some cracked pepper on top, and enjoy!

TOAST TUESDAY! Goat Cheese Grapes + Thyme

There is nothing I love more than the combination of sweet and savory all wrapped up together in a dish that is texturally soft and crunchy all at the same time. This toast just does it for me! I have combined fried bread, that has a crunch like no other, soft goat cheese, decadent sweet Chai Red Grape jam, herbaceous thyme and topped if with some fresh grapes for contrast! It truly was such a delicious breakfast treat! Get the full recipe below!

To create 1 piece of toast you'll need:

  • 1 slice of multi-grain wheat bread
  • 2 Tb olive oil (unless you just want to toast your bread in an oven)
  • 1 Tb goat cheese
  • 1 Tb Chai Red Grape Jam
  • 1 Ts fried pancetta
  • Fresh Thyme
  • A handful of fresh grapes

A cast iron skillet or a toaster

Instructions:

  1. Preheat your cast iron skillet on medium.
  2. After the skillet is heated up add olive oil, then fry the bread on both sides. This takes about 3-5 minutes per side. You could also just toast it in the oven or toaster!
  3. Put toast aside and then fry up pancetta in the skillet. I fry a whole pack of it and then use it through out the week.
  4. On your toast layer goat cheese, Chai Red Grape Jam, pancetta, thyme and fresh grapes cut in half length wise.
  5. Enjoy!

Toast Tuesday! French Toast w/ Whipped Cream + Jam

Hand made whipped cream is basically the most delicious thing you'll ever taste in your life and I'm only being mildly dramatic. One of the things I didn't know until today (when I talked our lady Jamie into making some for us) is just how much better it is than pre-made whipped cream! Jamie only used a bowl and a whisk to whip it up and watching the cream transform was straight magic! It tastes oh so good with jam on top of french toast! French toast always seemed like something that required a lot of time to make, but we ended up frying up 5 pieces and whipped the cream all in about 10 minutes! Find the recipe below!

To create 1 piece of toast you'll need:

For the whipped cream you need:

  • 3 Cups of heavy cream
  • 1 1/2 Ts Vanilla Extract
  • 1 1/2 Cups powdered sugar

You'll need a whisk, a bowl and a cast iron skillet.

Instructions:

  1. First, to make the home made whipped cream all you need to do is add the heavy cream, vanilla extract and powdered sugar into a medium sized mixing bowl and begin to whisk it aggressively! It takes about 10 minutes or so to whisk it into whipped cream! You can also use a hand held mixer or stand up mixer, but honestly just a whisk and a bowl and a little elbow grease will do! This recipe will make about a quart of whipped cream!
  2. Next preheat your cast iron skillet and make sure it's seasoned well. If not add a little bit of olive oil to it! Make sure it doesn't get too hot!
  3. In a mixing bowl add egg, brown sugar, heavy cream, vanilla extract and cinnamon. Whisk together! 
  4. Next add the slice of bread and let it soak in the egg mixture.
  5. Add the eggy toast to your skillet and fry for about 3-5 minutes until each side is brown! 
  6. Top with whipped cream and your choice of jam! We used Strawberry Balsamic + Cracked Pepper and Blueberry Lavender Vanilla!
  7. Enjoy!

Toast Tuesday! Blueberry Lavender + Mascarpone

Blueberies are coming! 

Prepare yourselves for this truly decadent, floral, sweet and refreshing toast! It's quick and easy to make, but it tastes so fancy!

To create 1 piece of toast you'll need:

  • 1 slice of egg bread
  • 1/4 cup of olive oil
  • 1 Tb Mascarpone cheese
  • 1 Tb Blueberry Lavender Vanilla Jam 
  • 1 Ts of walnuts
  • 4 or 5 fresh blueberries
  • Lemon zest 
  • Lavender buds
  • A cast iron skillet

Instructions:

  1. Heat up your cast iron skillet on medium high.
  2. Now add 1/4 cup of olive oil to the pan.
  3. Fry both sides of the bread slice until toasted and brown. It takes me close to 5 minutes per side. (NOTE: If you are making more than 1 piece of toast you will need to keep adding 1/4 cup of olive oil in the pan before each slice of toast goes in)
  4. After the bread is fried smear the Blueberry Lavender Vanilla Jam all over it.
  5. Next smear the Mascarpone cheese and top with fresh blueberries, walnuts, lemon zest and lavender buds.
  6. Enjoy! 

Toast Tuesday! Smoked Tomato w/ Ricotta + Prosciutto

We are starting a new series in the test kitchen called Toast Tuesdays! Every Tuesday we'll post a new toast recipe, and we aren't just talking about toast with butter and jam, although that's good too, we are going to elevate toast and highlight as many different combinations as possible to brighten your mornings or get you excited to snack! 

First up is this drool worthy recipe for Smoked Tomato Toast with Ricotta + Prosciutto, with a few other delicious add ons!

To create 1 piece of toast you'll need:

  • 1 slice of sourdough bread
  • 1/4 cup of olive oil
  • 1 Tb ricotta cheese
  • 1 Tb Smoked Paprika Tomato + Basil Jam
  • 1 slice of Prosciutto 
  • 1/2 Tb chopped fresh basil
  • 1 sprig of fresh thyme
  • 3 cherry tomatoes
  • 1 Ts of pine nuts
  • A drizzle of honey
  • A sprinkle of Florida Pure Sea Salt
  • Chili flakes to taste
  • A cast iron skillet

Instructions:

  1. Heat up your cast iron skillet on medium high.
  2. Chop cherry tomatoes in half and when the skillet is fully heated place them cut side down onto the skillet until they are fully blistered. Set aside.
  3. Now add 1/4 cup of olive oil to the pan.
  4. Fry both sides of the sourdough bread slice until toasted and brown. It takes me close to 5 minutes per side. (NOTE: If you are making more than 1 piece of toast you will need to keep adding 1/4 cup of olive oil in the pan before each slice of toast goes in)
  5. After the bread is fried smear the Smoked Paprika Tomato + Basil Jam all over it.
  6. Next smear the ricotta cheese on top of the jam and sprinkle with sea salt and basil.
  7. Add a slice of prosciutto to the top of the ricotta, then add the blistered tomatoes, pine nuts and the leaves from 1 sprig of thyme.
  8. Finally drizzle with honey and chili flakes.
  9. Enjoy!

Strawberry + Oat Yogurt Parfaits

So I'm jumping on the over night oats bandwagon here with this quick breakfast recipe! I'm not going to lie I also put this together because I like to eat pretty food, although I will say that over night oats are great to keep in the fridge for mornings you might be in a time crunch. After making these jars-o-deliciousness the crew all ate them and said it tastes like a cross between a PB+J and an ice cream sundae. I ain't mad at that!

To create the Strawberry + Oat Yogurt Parfait you'll need:

  • 1/2 cup of oats
  • 1/2 cup of almond milk
  • 1 Tb maple syrup
  • 1/2 cup of Greek yogurt
  • 1/4 cup of Strawberry Balsamic + Cracked Pepper Jam
  • 1/4 cup of crumbled graham crackers
  • 1 fresh strawberry
  • 1 Tb almond or cashew butter
  • Mason jars

Instructions:

  1. In a mason jar I added the oats, almond milk and maple syrup. I placed the lid on, shook it and put it in my fridge over night.
  2. The next day in another mason jar I began layering yogurt, the oats mixture, Strawberry Balsamic + Cracked Pepper Jam and graham crumbles! I repeated this until the jar was full!
  3. Top the jar with a fresh cut strawberry, almond or cashew butter and remaining graham crumbles! 
  4. Enjoy!
