Brooklyn South Specialty Cheese + Jam Pairings

This week we visited one of our favorite St. Pete local spots, Brooklyn South. With love all the way from Brooklyn, this little shop is our go-to for sandwiches and specialty cheese and meats on Central.

Meet Matt Bonano, deli owner and local cheesemonger!

We spent some time with Matt this week talking about all things cheese, sandwiches, small business, and community*. By now you all know we love cheese. But we hold a special place in our hearts for specialty cheese. That's right, cheese you won't find at a grocery store. Cheese that has such interesting stories and complex flavors they are perfect matches for our jams. So we picked out four cheeses and one of our jams to match with each type of cheese. 

1. Boxcarr Campo + Smoked Tomato Jam

2. Cambozola Black Blue Cheese + Blueberry Lavender Jam

3. Aged Dutch Gouda + Pear Habanero Jam

4. Robiola Bosina + Chai Grape Jam (pictured with Matt above)

Boxcarr Campo + Smoked Tomato Jam

This cheese comes from North Carolina and provides a firm, but creamy texture. It tastes bright with a gentle smoke flavor from the cow milk. The tang and smokiness in our Smoked Tomato jam will pair deliciously with this cheese.

 

Cambozola Black Blue Cheese + Blueberry Lavender Jam

Making blue cheese in southern Germany creates a surplus of milk. So out of that came Cambozola Black Blue cheese. Using a mix of gorgonzola cultures and camembert this cheese is aged in dark caves making the cheese over time savory, and salty, with a hint of sweetness. We chose our sweet, decadent, and slightly floral Blueberry Lavender jam to pair with this cheese. If there's one thing we love it's a blue with blueberries.

 

Aged Dutch Gouda + Pear Habanero Jam

This is a special gouda because by the time it gets to Saint Petersburg, it's already 2 years old! It spends a year and a half alone just curing in Holland. What makes it really special is that the cows that produce the milk to make this cheese feed on lush grass grown from blue clay. Blue clay is a very nutrient dense soil because Holland is actually below sea level – so you can imagine how fresh and delicious this cheese is! Don't forget to enjoy the tyrosine crystals that crunch when you bite into them, a flavor punch for sure. The spice and subtle sweetness of our Pear Habanero jam will have all your senses tingling.

 

Robiola Bosina + Chai Grape Jam

Robiola Bosina is Italy's answer to Brie. While not the same, it has a similar soft and creamy texture. This cheese combines cows and sheeps milk and is aged 30 days to reach its peak flavor. Expect a cheese that's gamey, sweet, milky, soft, and rich. If you're not already drooling over this, be sure to pair it with our Chai Grape, a sweet spiced jam that will have you coming back for more!

For the Beer Lover

If your Dad would prefer to spend weekends at one of the awesome craft breweries we have, then this bundle is perfect for him! Our two mustards are made with beer from Green Bench Brewery. Sweet German will be sweet with some spice, and the Spicy Stout will bring the heat with chili flakes and black pepper. And while they're sipping on their favorite beer, Habanero Dills will hit that spicy, snacking spot!

For the Pickle Person

Give your Dad something to snack on when he opens the fridge! This combo of pickles hits all the flavors he could ask for. Our Chili Brussels, will make even a brussels sprouts hater fall in love with it's super savory cumin and chili pepper (seriously, they're that good). Sriracha Okra, is full of sweet smokiness, with a little bit of heat, and essential in a Bloody Mary. Finally Habanero Dills, bring some REAL heat and the perfect amount of garlic. We'd like to see him eat more than one at a time!

For the Spice Guy

This is for the Dad who says there's never too much heat! We rounded up our spiciest preserves to make his tastebuds dance. Again, we have Habanero Dills (we've never met a Dad who DIDN'T love these), they are definitely our spiciest preserve and and spice lover will eat these up! Pear Habanero is a wonderful jam that is the perfect balance of sweet and spicy. It also happens to be amazing for grilling any and all kinds of protein. Top it all off with our Spicy Stout mustard and your spice guy is going to be satisfied!

For the Sweet Tooth

Not all Dads prefer savory or spicy things! These jams are for the Dad who prefers all things sweet! We rounded up our sweet and delicious jams, that are great for morning toast, quick PB+J lunches, or in an after work cocktail. Caramel Apple will remind him of his Mom's apple pie, while Peppered Strawberry is fresh and sweet, and Chai Grape will brighten his mornings.

So if your Mom falls into this category, delight her taste buds with a collection of our spiciest jam, pickle, and mustard. Garlic Dill Habanero Cucumbers are sure to bring the fire, Pear Ginger Habanero jam will sweeten and burn to perfection on a goat cheese log with crackers, and our Spicy Brown Stout Beer Mustard will make a tingly dressing or sandwich topper!

For the Mom with that sweet + salty combo taste, we recommend our sweet and slightly savory Smoked Paprika Tomato + Basil jam. Adding on our savory Chili + Fennel Brussels Sprout for a salty snack crunch, and our Sweet German IPA Beer Mustard for a sweet and spicy kick, will be sure to hit all of her favorite flavor profiles!

For the DIY Mama

Maybe your Mom likes to get out there and learn new things! We created a special class on Mother's Day for the special lady in your life. It's also a fun class to take with her for some Mother/Daughter time (hint, hint). We'll be learning how to make a delicious cashew nut cheese, and blueberry jam. Make Your Best Picnic Ever!

It's one of our favorite times of the year where it's warm and sunny, but still cool and breezy enough that you want to be outside ALL the time. This weather has had us inspired to get together with our friends and create the best picnic. How strong is your picnic game? If it's been a while since you've gathered for one, we have our three top tips to get you planning!

1. GOOD FOOD

Ok, this goes without saying, but sometimes it's hard to know what to pack when you're going to be eating on the ground. Our answer is: finger food, and lots of it. Snacking is one of the easiest ways to enjoy a meal with friends, but also be portable too. And you're in luck, because this is our specialty. We brought along some of our standard favorites like Sriracha Peppered Okra, Chili Fennel Brussels, and Garlic Habanero Cucumbers. For a little seasonality, we also brought along Herbed Summer Squash (limited batches at markets and in-store now).

Gather different cheeses, meats, jams, nuts, fruit, crackers, and our German IPA Beer Mustard to make a beautiful but simple charcuterie board. If you're new to cheese and meat boards, we can help you learn how to build a board to perfection! 

Another one of our favorite picnic snacks to bring are cheese logs. We love a good cheese smothered in jam and topped with fresh herbs and nuts. You can check out a couple recipes here and here for ideas.

2. GOOD DRINKS

You obviously can't enjoy good food without good drinks! We love a fizzy spritzer on a warm and sunny day. Have you tried our Blueberry Lavender Jam Gin Fizz? Because if not, put it on your list to bring. It's cold, refreshing, and dare we say, one of the easiest drinks to make! P.S. You gotta try our Strawberry Balsamic + Cracked Pepper jam in drinks and with goat cheese.

If you want to stick with water, don't go plain. Add some fresh fruit and herbs to your water pitcher a couple hours before your picnic for infused water! We have some mouthwatering infused water recipes here.

3. GOOD FRIENDS

The most important element to the best picnic ever, is friends. Food and drink don't matter as much when you have your best friends by your side laughing and catching up. That's really the sweetest part of life right? Let's celebrate this weather, our friends, and the opportunity to nosh on some good food.

Florida Blueberry Season Is Here!

The only thing that makes Florida strawberry season ending feel better is that Florida blueberry season begins! We are just at the very beginning of the season and we have been checking in on our favorite farmer, Sue at Blues Berry Farm, all year long and holding our breath for word that the blueberries were coming, and now they are! 

This past Wednesday I came out to pick up our first harvest of blueberries from the farm! Sue always takes me up and down each row teaching me about the different varieties she's growing, details about their sustainable farming methods and which blueberries are ready for the picking! I can't tell you all enough how amazing it is to work so closely with our blueberry farmer. 

After the blueberries are harvested I bring them back to the kitchen for processing and they are canned into jam the very next day! I can confidently say our Blueberry Lavender Vanilla Jam is one of the freshest jams around!

Strawberry + Oat Yogurt Parfaits

So I'm jumping on the over night oats bandwagon here with this quick breakfast recipe! I'm not going to lie I also put this together because I like to eat pretty food, although I will say that over night oats are great to keep in the fridge for mornings you might be in a time crunch. After making these jars-o-deliciousness the crew all ate them and said it tastes like a cross between a PB+J and an ice cream sundae. I ain't mad at that!

To create the Strawberry + Oat Yogurt Parfait you'll need:

  • 1/2 cup of oats
  • 1/2 cup of almond milk
  • 1 Tb maple syrup
  • 1/2 cup of Greek yogurt
  • 1/4 cup of Strawberry Balsamic + Cracked Pepper Jam
  • 1/4 cup of crumbled graham crackers
  • 1 fresh strawberry
  • 1 Tb almond or cashew butter
  • Mason jars

Instructions:

  1. In a mason jar I added the oats, almond milk and maple syrup. I placed the lid on, shook it and put it in my fridge over night.
  2. The next day in another mason jar I began layering yogurt, the oats mixture, Strawberry Balsamic + Cracked Pepper Jam and graham crumbles! I repeated this until the jar was full!
  3. Top the jar with a fresh cut strawberry, almond or cashew butter and remaining graham crumbles! 
  4. Enjoy!

Vegan Caramel Apple Waffles

Today we had our own little holiday morning in the kitchen when we made these Vegan Caramel Apple Waffles! They are such a decadent dessert style waffle and we all felt a little bit fancy eating them! I had never made waffles before so I wasn't sure what to expect. It turns out the entire process took around 20 minutes! So much easier than I had anticipated! Check out the recipe below to see how we made them.

To create the Vegan Caramel Apple Waffles you'll need:

  • 2 cups of all purpose flour
  • 1 tb sugar in the raw or agave
  • 4 ts baking powder
  • 1/4 ts salt
  • 1 3/4 cup almond milk
  • 1 tb apple cider vinegar
  • 1/2 cup of vegetable oil
  • 1/4 cup of Caramel Apple Sea Salt Jam
  • Non-stick spray

Instructions:

  1. Preheat waffle iron.
  2. In a bowl whisk together flour, sugar, salt, and baking powder.
  3. In a small bowl add together almond milk, vinegar, and vegetable oil and stir.
  4. Slowly pour wet ingredients into dry ingredient bowl and stir until everything is well combined. Note: Waffle batter looks a little chunky and that's ok.
  5. Next add the Caramel Apple Sea Salt Jam and stir to combine.
  6. Spray the inside of your waffle iron with non-stick spray.
  7. Pour in 1/3 of waffle batter and close to cook for about 5 minutes or until your waffle iron signifies it's done! Continue until batter is finished. Should make 3 waffles. 
  8. We topped ours with chocolate sauce, extra jam, fruit and powdered sugar! Enjoy!

Pickled Beet + Goat Cheese Salad

When I was growing up my family always had pickled beets down in the cellar. I hated them! As an adult I thought long and hard about just what it was about them that I hated most. I discovered that it wasn't so much the flavor of the beets I didn't like, but the texture. I found out that my family recipe and most other southern recipes for canned beets involved cooking them first before you pickled them! Well that's an easy fix! Our pickled beets are not cooked at all before canning. We cold pack them raw and with some magical brine + spices! They ARE NOT mushy and now I love them! We also julienne them so you can easily add them to salads or pile them high onto burgers or BBQ sandwiches!

I have to tell you that I often times feel like a bunny rabbit when it comes to greens and lettuces. I just can't stop nibbling on them! I eat at least one salad a day. I ain't talking about ice burg lettuce, though; It has it's time and place (like on a salad bar with some croutons, bacon bits and shredded cheddar), but when I'm building salads up for myself at home I like to get the biggest nutrient bang for my buck! I love mixing more common lettuces like red leaf with dense greens. In this salad I mixed red leaf with both kale and swiss chard! There's even dill in this recipe, which I adapted from the Cooks with Cocktails blog!

To create the Pickled Beet + Goat Cheese Salad you need:

  • 3 Cups of chopped red leaf lettuce
  • 2 Cups of chopped swiss chard, excluding the stems (which I saved on the side to pickle)
  • 1 Cup of chopped kale
  • 1 Jar of Ginger Spiced Pickled Beets
  • 1/2 Cup of crumbled goat cheese
  • 4 Tb finely minced fresh dill 
  • 4 Tb Olive oil
  • 4 Tb Balsamic vinegar
  • 4 Tb of brine from the Ginger Spiced Pickled Beets
  • Salt + Pepper to taste
  • 1/4 Cup pecans
  • 1 Tb Maple Syrup

Instructions:

  1. First I preheated my oven to 350.
  2. On a cookie sheet that I lined with parchment paper I added the pecans and the maple syrup. With my hands I mixed them together and then spread the pecans over the sheet evenly. 
  3. Bake them for 10 minutes. Remove and let cool.
  4. In a large bowl I added the lettuce, kale, swiss chard, dill, the whole jar of Ginger Spiced Pickled Beets (excluding the brine) and the pecans and tossed it to combine.
  5. In one of my left over 1/2 pint mason jars I added the olive oil, balsamic vinegar and beet brine! Then I slapped the lid on and shook it! 
  6. Next I dressed the salad and tossed it again. Each person kinda likes a different amount of dressing so if you have left overs that's cool too! 
  7. That's it! Enjoy! For me this salad served 5 of us in a normal sized salad bowl.
