In our kitchen right now we have a limited small batch of Cowboy Candy and Cinnamon Clove Sweet Pickle Relish. We were itching to use them in a dish, so we spent our Sunday making home made Pimento Cheese and perfecting our Johnny Cake technique to create a delicious savory pancake dish. Cowboy Candy is candied jalapeños, so the sweet heat makes for a wonderful topper with cheeses!
To create the pimento cheese we followed this recipe by chef Sean Brock, and instead of using pickled ramps we used our Cinnamon Clove Sweet Pickle Relish.
After the pimento cheese was made we put it in the fridge to blend and marinate over night.
To make the Johnny Cakes we followed this recipe using heirloom corn meal from Anson Mills:
1 Cup Boiling Water
3/4 Cup Corn Meal
1 1/4 Cup Buttermilk
1 Cup Unbleached White Flour
1 Tb Baking Powder
1 Ts Salt
1/4 Ts Baking Soda
1/4 Cup Vegetable Oil
Pour boiling water over cornmeal and stir until it becomes really thick. Then slowly add in milk. Next add the eggs and beat it all together with a whisk. Next sift flour and add it to the bowl as well as the baking powder, salt and baking soda. Next fold in oil. The batter is now complete!
To cook Johnny Cakes we always use our cast iron skillet or griddle. You want it to be hot and not oiled. Now you cook them just like pancakes! Pour batter into the skillet making rounds and when you see little bubbles all over the surface of the cake flip it over with a spatula. It only takes a minute to brown up the other side! Then you pile them onto a plate until you've cooked them all! This recipe makes about 14 cakes.
After the Johnny Cakes were complete we put a dollop of pimento cheese onto each one, then added 1 or 2 pieces of Cowboy Candy to it and we finished it off by drizzling blackstrap molasses over the mess of them.
